Beetroot Lentil Soup 

Beetroot Lentil Soup is a nourishing and vibrant dish that combines the earthy flavors of beetroot with the hearty goodness of lentils. Ingredients (Serves 4)

  • Beetroot- peeled & chopped- 1 medium
  • Lentils (mix of yellow moong dal + red masoor dal)- ½ cup
  • Chopped onion- 1 small
  • Garlic- 2-3 cloves
  • Jeera- ½ tsp
  • Pepper- ½ tsp
  • Turmeric- ½ tsp
  • Salt to taste
  • Water- 2 cups
  • Lemon juice (to taste)
  • Coriander leaves- for garnish

Method

1. Set aside the ingredients

Beetroot, washed Lentils, Onion, Garlic, Jeera, Pepper, Turmeric, Salt.

2. Pressure Cook

Add all the ingredients to the pressure cooker, add 2 cups of water, and cook for 2-3 whistles.
Let the pressure release naturally.

3. Blend & Serve

  • Blend the cooked mixture using a hand blender or mixer until smooth. Add a little hot water to adjust consistency if required.
  • Garnish with fresh coriander & Lemon juice. Serve hot.
